A Spanish restaurant on the roof level of The Westin Manila in Ortigas Centre, run under the Chele Gonzalez name with chef de cuisine Álvaro Romero, who grew up in Cádiz and worked on the research team at Mugaritz. The cooking leans on the sea: Spanish anchovies, grilled wild turbot, and local lapu lapu alongside classic and more inventive tapas. You eat with a view of the city skyline from the rooftop terrace, and the Michelin inspectors single out the lunch menu for value.
