Iai is chef Bruce Ricketts' sushi kappo restaurant on the ground floor of The Montane in BGC, open for dinner only. The heart of it is a ten seat acacia counter where he serves the sushi omakase himself: four or five seasonal small plates, six or seven pieces of nigiri, a meat course and dessert.

A shorter kappo omakase of seven courses, without sushi, is served at two tables and in a private room for four to nine. The menu moves with the season and with what Ricketts finds that day, mixing Japanese technique with Filipino and imported ingredients.
