Masa Madre is pastry chef Kris Edison Tan's viennoiserie and cafe on the ground floor of the Cocolight Building. Tan is the third Filipino to hold the French title of Ambassadeur du Pain. He started it as an online test kitchen in March 2021 and opened this cafe in August 2023. Every loaf and pastry begins with his levain, the mother dough the name refers to.

Order the croissant (₱115), the cheese puff or the Croloaf, a loaf made with pastry dough. Sourdough is ₱299. Pastas, sandwiches and rice bowls run to ₱429, plus a 6 percent service charge. It shares its ground floor with an appliance showroom, so the room is more useful than pretty.
