Palm Grill on Tomas Morato cooks the food of Zamboanga, Basilan, Sulu and Tawi Tawi. Chef Miguel Cabel Moreno, a Tausug cook who worked as a nurse first, runs it with his older brother King, and some of the chicken recipes come from his clan. The room is small and warm, with woven table runners and ethnic inspired music; the cooking leans on spices, acidity and roasted coconut.

## Why go

1. Tiyula itum, the Tausug beef soup with a smoky, slightly sour coconut broth
2. The Dulang, a platter of seven dishes in tasting portions, as a first introduction
3. One of very few Manila kitchens cooking Tausug and Southern Mindanao food
4. The chef behind it also holds a second Bib Gourmand, at Cabel
