Papillon is a Southeast Asian restaurant on Tordesillas Street in Salcedo Village from chefs RJ Ramos and Alphonse Sotero, the pair best known for Lampara in Poblacion. Ramos cooks the savoury side and Sotero the desserts, reinterpreting classics from across the region, from a Hanoi style cha ca la vong to a rendang style braise. The room is tropical colonial, with panelled teal walls, velvet armchairs, ceiling fans and a mezzanine bar under a copper ceiling.

## Why go

1. Southeast Asian classics reworked by the chefs behind Lampara
2. Cha ca la vong and Thai shrimp balls in pasta sheets, both named by the Michelin inspectors
3. A dessert hot pot that Tatler described as a nod to Vietnamese che and Thai tub tim krob
4. Open 11am to 11pm every day, so it works for a late lunch or a long dinner

## Good to know
