Ruby's is a 12-seat lounge inside the first Max's Restaurant on Scout Tuazon, named for Ruby Trota, who created the fried chicken recipe Max's was built on. It feels like a lola's living room: well lit, quiet, with her portrait by the bar.

The cocktails, from consultant Mandrake Ferrer, riff gently on classics. The Maximo turns the flavours of tinola into a savoury dirty martini, and drinks run about ₱100 less than at the bars nearby.
