Natural Wine at Bombvinos Bodega

Chef Don Baldosano's natural wine bar in Makati pairs modern Filipino small plates with a low-intervention wine list, now played through a locally built hi-fi rig from Fatima Sound Practice. Under the name B! Public Service, the bodega runs weekly listening sessions and DJ residencies that move from ambient into warm, uplifting house, with selectors such as Blush, Daze and Versailles. It is a design-literate evening for anyone who takes both natural wine and a serious sound system to heart, and it works equally well as an easy after-work stop or a slow date.
