A Spanish roasting house about 80 kilometres from Metro Manila in Alfonso, Cavite, set in a 9.4 hectare farm development called The Lava Rock, whose main building, by Carlo Calma, mirrors the shape of nearby Taal Volcano. Chele Gonzalez is chef patron and co owner, with executive sous chef Rodrigo Osorio cooking in a wood fired Castilian Maestro oven. Upstairs is the formal multi course room; downstairs, the Alfonso Roasting Room serves à la carte Spanish dishes for sharing. Go for the Segovia suckling pig and the house aged A5 wagyu ham.
