Cerulean is a seafood restaurant by chef Francis Tolentino and the team behind Taupe, opened on 15 July 2026 on the second floor of The Shops at Ayala Triangle Gardens. The fish comes from small fishing communities around the country and is cooked with Asian flavours. Think scallop dumplings in pork knuckle broth, crab chawanmushi, chipirones claypot rice, and dry-aged fish from the grill. Even dessert keeps to the sea, with an uni ice cream sandwich. The room, by Noel Bernardo, is sand and deep blue with jellyfish-like lamps, and a private room seats up to 10.
