Fujiyama 55 is a Nagoya tsukemen chain founded in 2003, and its first Philippine shop opened in May 2025 on the ground floor of McKinley Exchange, at the corner of EDSA and McKinley Road. The house dish is tsukemen: thick, chewy noodles made fresh daily, dipped into a dense pork and fish broth. Finish by ordering rice and cheese, which the kitchen turns into a risotto with the last of the broth. The garlicky Jiro style ramen is the other reason to come.
