Iai is the sushi kappo counter of chef Bruce Ricketts and his wife and co-owner Jae Pickrell, opened after his nine years at Mecha Uma. It is on the ground floor of The Montane in BGC, across from the Grand Hyatt, and is listed in the Michelin Guide Philippines. The room is small: a ten-seat counter, two tables and a private room for four to nine. Dinner only, Wednesday to Sunday, by reservation through the website, 50% deposit, no walk-ins. The sushi omakase at the counter is ₱8,900 a head, the kappo omakase at the tables ₱5,800, both before a 10% service charge. Courses change with the season and the day's catch, so nothing on the menu is fixed.
