JP Cruz was sous chef at Toyo Eatery before opening Inatô in 2024 in The Alley at Karrivin on Chino Roces. The name means our way in Binisaya. Eight seats face the open kitchen along a marble counter. No printed menu: the Bahala Na set is four courses fixed on the night from what is in season, ₱5,900 a head plus service, wine or sake pairing extra. Tatler named it Best Service in the Philippines for 2026 and it holds one Michelin star. Two counter seatings a night, 6pm and 8:30pm, and the early one hands the seats back by 8pm.
