Don Patrick Baldosano cooks alone for ten diners in his family home in Marcelo Green Village, Parañaque, in what was his childhood bedroom, now lined with woven wall coverings and lit by Tiffany style lamps. His changing tasting menu digs into overlooked regional dishes and ingredients from across the archipelago, such as lamb dumplings in pork broth or turon with aged banana and jackfruit. He won the first MICHELIN Guide Young Chef Award in the Philippines in 2026.
