Mugen Ramenya is chef Jorge Mendez's ten seat ramen bar on Maginhawa Street, open since August 2025 and a Tatler Best 2026 pick. The broths are slow simmered, the noodles are pulled, and the bowls go well past the usual: a crab ramen crowned with crab, a wagyu and tendon ramen, and a Hakata pork tsukemen. There are no reservations and no numbers. You queue in person, order and pay while you wait, and the wait often runs past an hour.
