Ramen Ibuki opened at Uptown Parade in early 2026, the first Philippine shop from Japanese ramen producer Takafumi "Shimayan" Shimada, run with the Vikings Group. Instead of heavy pork broth it works with a clear seafood and chicken dashi and a foamy chicken paitan, with noodles made in house and served in Arita ware bowls. Most of the room is a long counter where you can watch the bowls being built. It stays open until 2am on Friday and Saturday.

Why go

  • 01Clear dashi ramen, light but full of flavour
  • 02Tori Foam Ramen, a creamy chicken paitan with a foam on top

  • 04Open until 2am on Friday and Saturday
