Toma Toma is Arcadius Rybak's cocktail bar and restaurant inside Green Sun, the industrial hotel on Chino Roces Avenue Extension. Rybak ran the bars at Rosewood Hong Kong, then spent years on an idea built from Philippine ingredients: lambanog, tultul salt and Laguna stingless bee honey. It soft opened in March 2026 and opened fully in May. Order the Lambatini, a martini of lambanog and house vermouths washed with coconut oil, or whichever seasonal fruit cocktail is on. Food is skewers and small plates, a menu built with Stephan Duhesme of Metiz and run by head chef Paolo de Guzman. Cocktails are ₱500 and skewers ₱440, so an evening adds up. Closed Sunday and Monday. The room is dark.
