Wai Ying is a Hong Kong style fast food shop on Benavidez Street in Binondo, and the place most people name for dim sum in Manila's Chinatown. Steamers of hakaw and siomai sit at the front, and the chong fan, soft rice noodle rolls filled with asado pork or shrimp, is the house favourite. The roast duck and the beef brisket mami are the other reasons to come. It is quick, inexpensive and busy, an everyday Chinese Filipino canteen rather than a banquet room.
