For Independence Day week, eight Diamond Hotel chefs led by Jemelle Baarde turn Corniche's buffet into a tour of regional Filipino cooking. The spread runs from purple yam soup and pako salad with crispy dilis to smoked tinapa pizza, Pampanga sisig fried rice, and a dessert table of ube yema cake and ginataang halo-halo sa bayabas.
