Alba is the oldest name in Spanish cooking in Manila: Anastacio de Alba came from Ávila in 1952, and the restaurant credits its cooking to him and his son, chef Miguel. The Makati branch on Polaris Street in Bel-Air is the main house, a yellow Spanish-style building a short walk from Makati Avenue. The menu is classic Castilian and generous: around fifteen paellas, each for two to three and cooked to order in about 30 minutes, plus callos, lengua Sevillana, rabo de toro and house-cured jamón serrano.
