Hinoki is a Japanese restaurant on Arnaiz Avenue in Legazpi Village, opened in mid 2026 by chef Yusuke Hino, who was master chef at Senju in Edsa Shangri-La. The room is wood and stone by Studio Ong, the designers behind Iai and Inatô, with an à la carte dining room, a few private rooms and an eight seat omakase counter. The counter is the reason to book. Hino slices and shapes in front of you, asks what size of nigiri you prefer, and chats in Tagalog as easily as in English. Expect bluefin tuna in three cuts, Hokkaido uni and Kagoshima wagyu, and a choice of his sushi rice risotto with king crab or a wagyu sukiyaki.
