Menya Ippondo, once called Ramen Shimada, is a ramen shop inside Little Tokyo, the Japanese food compound on Chino Roces Avenue at the edge of Legazpi Village. It is known for Jiro style ramen, a heavy bowl of thick chewy noodles under a pile of cabbage, bean sprouts, garlic and thick pork, which few shops in Manila make. It also does tonkotsu, a tantanmen (spicy sesame) and a Taiwan ramen with clams, and it stays open until 5am, which makes it the ramen stop after a late night in Makati.
