Papillon is a Southeast Asian restaurant on Tordesillas Street in Salcedo Village from chefs RJ Ramos and Alphonse Sotero, the pair best known for Lampara in Poblacion. Ramos cooks the savoury side and Sotero the desserts, reinterpreting classics from across the region, from a Hanoi style cha ca la vong to a rendang style braise. The room is tropical colonial, with panelled teal walls, velvet armchairs, ceiling fans and a mezzanine bar under a copper ceiling.
