The Tattooed Baker is chef John Lees's bakery and patisserie on the ground floor of the Kalayaan Building, on the corner of Salcedo and Dela Rosa in Legazpi Village. It opened in February 2023 and bakes every day: croissants, pain suisse and pain au chocolat, French macarons and ciabatta. The plain and almond croissants are the ones people come back for. The house bread goes into the sandwiches, and there is breakfast and brunch at the tables, so it works as a sit-down stop as well as a bread run.
