Zagin Soba is the Manila branch of an Osaka paitan ramen shop, opened in September 2025 on the corner of Rufino Street and Ayala Avenue in Salcedo Village. Head chef Shun Sato builds the bowls on a creamy, frothed chicken broth, using Kagoshima chicken and broth sourced from Japan, with noodles made for the shop locally. The room is small and calm, with bar seats facing the open kitchen. It makes a limited number of bowls a day and closes when they run out.
