Panaderia Dimas-Alang has baked on Mabini Street in old Pasig since 1919, in a two-storey white house with the name and the year on the front. It still fires its century-old pugon with logs, and the pandesal comes out with a light, crisp crust and a slightly smoky taste. Beyond the pandesal there is pan de coco, Spanish bread, egg pie, brazo de Mercedes and the square biscuits called Hindi Ko Akalain. It opens at 5am, which is when to go.
